1 Minute Self Saucing Caramel Pudding

This indulgent dessert is a quick fix when you want something sweet. It has a caramel sauce and is best eaten warm, alone or with a scoop of ice-cream. Enjoy!

Preparation Time: 2 minutes
Cooking Time: 1 minute
Serves: 1 mug cake

Ingredients
For the batter
4 tbsp self raising flour (gluten free)
2 tbsp brown sugar
2 tbsp butter, melted (or nuttelex if lactose free)
4 tbsp milk (lactose free)
1/4 tsp vanilla extract

For the caramel sauce
1 tbsp brown sugar
1 tbsp butter, melted (or nuttelex if lactose free)
1 tbsp milk (lactose free)
1/8 tsp vanilla extract

Method
In a microwavable mug stir the butter, brown sugar, milk and vanilla essence for the batter, until the sugar is disolved.

The sugar will dissolve quickly

Add the flour and stir to combine to make the batter.

In a separate mug combine the caramel sauce ingredients. Pour onto the batter.

Microwave for 1 minute.
Serve warm in the mug or turn out on a plate.
