2 For 1 Blackberry & Apple Sponge Puddings

blackberry & lemon pudding


The lemon sponge mixture for this recipe makes enough for two puddings, so the family can decide if they feel more like blackberries or apples.

Preparation Time: 35 minutes
Cooking Time: 40 minutes
Serves: 6 (3 of each pudding)

Ingredients
For The Lemon Sponge
50g coconut oil
3 tbsp Truvia sweetener (or 150g caster sugar)
3 eggs
3 lemons
300ml almond milk
50g plain wholemeal flour
tsp baking powder

For The Blackberry Pudding
200g blackberries

For The Apple Pudding
2 large Braeburn apples

Method
Zest and juice the lemons.

Beat the zest into the coconut oil and sweetener/sugar.

Separate the eggs and beat in the yolks, along with the lemon juice and milk.
Fold in the flour and baking powder.

Whisk the egg whites to soft peaks and fold in.

Pre-heat the oven to 180 ༠C/ 160 ༠C fan/ 375 ༠F/ 5 Gas.
Place the blackberries In a small baking dish and pour the sponge mixture over the top until it reaches the rim of the dish (there should be about quarter of the mixture left).

Slice the apples into large chunks and place in a large baking dish.
Pour the remaining mixture over the top, so that the apple pieces can be seen poking through.
Bake both in the oven for forty minutes.
