3 Bean Salad

My 3 beans salad consists of Japanese edamame beans, broad beans and popping fresh peas with salty, creamy chunks of feta.

This is the perfect Summer time salad. It's delicious and nutritious at the same time.

Preparation Time: 3 minutes
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
Japanese Edamame Beans 150g
Broad Beans 100g
Frozen Peas 150g
Danish Fetta Cheese 150g
1 Fresh Lemon Juice
Honey Mustard Dressing 4T
Extra Virgin Olive Oil 2T
Sea salt & cracked black pepper




Method
Cook all beans & peas in boiling water for 3-5 minutes. Drain, remove and set aside to cool.

Mix Olive oil, creamy honey mustard dressing and 1 whole lemon juice together.

Pour into the cool mixed beans and toss well.

Roughly break Danish feta into chunk pieces and scattered on top.



Serve with a wedge of lemon and garnish with sea salt and cracked black pepper.
