These Raffaello Bites are incredibly easy to make and are the perfect treat for a dinner party.

Makes: 20-25 servings, depending on the size of the bites
Ingredients 250 g of shredded coconut
300 ml of condensed milk
Raisins, almonds, peanuts for the centre of the balls, or you can leave them plain
Shredded coconut for coating, or almond meal
In a big bowl add the shredded coconut and half of the condensed milk. Mix with a wooden spoon and add milk a little at a time, until you have a dough-like consistency. You may need more or less condensed milk so feel free to use as much you need.
When your “dough” is ready, take small scoops, add the desired nut or dried fruits inside and form into a ball with your hands. If you don’t want any fruit or nuts inside, just leave them out.
When you finish forming balls, coat them in extra shredded coconut or almond meal. This time I used almond meal, but coconut is just as good.
Arrange the Raffaello Bites on to a platter and serve them as a fancy, but easy to make dessert at a dinner party.
