This simple and yummy alcohol-tinted cupcake icing is sure to please.
Preparation Time: 10 minutes
Makes: icing for 24 cupcakes
Ingredients
6tbs Irish Cream
1tps Vanilla
3tbs Milk
¾cup Softened Butter
3cups icing sugar
Semi-sweet baker chocolate (optional)
Method
Tip: For a stiffer icing, you can replace some or all the milk with additional Irish cream
Tip: You can change it up by using flavoured Irish cream drinks. For example, for the icing in the photos I used Bailey’s biscotti flavoured Irish Cream and it turned out wonderfully.
Combine all the ingredients in a large mixing bowl and lightly stir with a fork until all the icing sugar has blended in.
Mix with a hand blender for three minutes or until the icing is smooth.
Grate chocolate and set aside.
Spread icing on cupcakes, then sprinkle on chocolate.
