I like salad however I like ones that have unusual ingredients, and salads are an easy thing to "throw things together" as many salads go well with other fruits and foods.
So I have done three salads that would be suitable for adding to most meals.
Preparation Time: 10 minutes each plus standing
Cooking Time: 5 minutes
Serves: 2 - 4
Ingredients Salad 1 - Banana and celery A few lettuce leaves
1 banana (not too ripe)
1 lemon and a bit of water
2 stalks celery
¼ cup yogurt
Salad 2 - Coleslaw with pineapple ¼ small green cabbage
About 1 - 2 sticks celery
½ small onion or shallot
225 g can pineapple pieces
Walnut pieces, to taste
¼ cup mayonnaise
About 2 tbsp sour cream
Salad 3 - Orange Coleslaw ¼ cabbage, shredded finely
1 orange, peeled and segmented
¼ cup green capsicum, sliced
¼ cup red capsicum, sliced
¼ tsp lemon rind, grated
1 tsp orange juice
Dressing ¼ cup yogurt
1 tbsp orange juice
1 tbsp lemon juice
½ tbsp vinegar
Method For Banana and celery
Shred the lettuce leaves finely and peel the bananas.
Slice them as per the photo.
Soak them in the lemon juice and water for about 5 minutes. Drain and towel dry.
Combine the bananas, shredded lettuce and celery.
Mix the chives in the yogurt and add a bit of black pepper to taste.
Add this to the bananas and celery and mix well.
You could also serve this in lettuce leaves, and quantities are whatever you like with this one!
For the coleslaw with pineapple
Shred the cabbage finely and if you have washed it, dry it.
Cut the celery into thin slices and cut the onion also into thin slices.
Drain the pineapple.
Arrange the walnuts on an oven tray and bake in a moderate oven for about 5 minutes until toasted.
Mix the cabbage, celery, onion, pineapple and season with salt and pepper.
Combine the mayonnaise and sour cream, add the walnuts to the salad, and add just enough of the dressing to coat the salad lightly.
For the orange coleslaw
Combine all the ingredients (except dressing).
Combine the dressing ingredients, add some pepper and mix.
Mix this dressing into the salad and let stand for a while before serving.
