I bought some organic peanut butter and I didn't like it much on it's own, so I found a way to incorporate it into a recipe and use it up. That's how I came up with these 5 ingredient cookies.
Preparation Time: 2 hours bake time for almond flour
Cooking Time: 20 minutes
Makes: about 10 cookies
Ingredients
1/2 cup almond flour
2 tablespoons of organic peanut butter
1/8 cup dark chocolate chips or buttons cut into four
2 tablespoons raw organic honey
1 egg
Method
To make the almond flour
To make these you first need to know how to make almond flour. To make almond flour you need to make almond milk,
once it's been made and strained the left over is called almond pulp. You need to dehydrate it at 160 degrees for about 1 and 1/2 to 2 hours you then blitz with a stick blender to make a floury texture. Mine is never completely powdery it's a bit chunky but I like that. If you don't want to make the milk and spend the time making the flour, these can be made with almond meal, but the texture is different so it's not quite the same. I prefer the almond flour.
To make the cookies
Finally onto making the cookies, this is the easy part
Add honey, peanut butter and egg and mix until well combined.
Add in almond flour and choc chips, stir to combine and spoon spoonfuls of mixture onto a tray lined with baking paper
Bake at 180 degrees Celsius for 20 minutes
Take out and cool on a wire rack and they are good to go
