Acai Berry Bowl

An antioxidant rich breakfast for the health nut! This is a sure fire crowd-pleaser straight from the Amazon. Make in advance to keep in the freezer or blend and serve straight away.

Preparation Time: 10 minutes
Cooking Time: 2 minutes
Makes: approx 6 servings

Ingredients
MIXTURE
2 bananas
2 tbsp freeze-dried acai powder
1 1/2 cups blueberries
1/3 cup dessicated coconut
1/3 cup rolled oats
1 cup water
1 cup crushed ice cubes

TO SERVE
toasted muesli
banana slices
coconut flakes
fresh berries

Method
Combine the acai powder, blueberries, juice, ice and banana into a blender or food processor.

Blend until completely smooth. You can even use a hand mixer as long as its powerful enough to blend ice.

Distribute the mixture into serving bowls or containers if you'd like to freeze for later.

When serving, top with muesli, banana slices, coconut and your favourite fruit

Nutritious and delicious! For an even extra health boost try adding chia seeds, flaxseed/linseed, psyllium husk or even protein powder! You can't go wrong.

Be creative. The great thing about this recipe is how versatile its parts can be! Try different types of fruit juices. Replace muesli with puffed rice, granola clusters or your favourite cereal. You can even mix other fresh fruit in like mango, apple or papaya to experiment with flavours.
