A hearty and healthy family time meal can be difficult to find, but with only a little effort, my African meatballs and sadsa can become a delicious dinner, the whole family can enjoy.

Sadsa is what potatoes are to the European, and what rice is to Asian populations. Sadsa is the staple food of Africa and commonly called 'fufu', or 'schtwala'.

I enjoyed my first taste of sadsa when I went to my brother in law's Uncle's house. Served like mashed mashed potatoes, but eaten with your hands, it looked a bit like mashed potatoes, but had a grainy consistency.

Sadsa is made from milled maize.

Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 5 servings

Ingredients
1 red onion
2 garlic cloves
Handful flat leaf parsley
400g minced beef
Tin of chopped tomatoes
Half tsp black pepper
2 eggs
Half cup of maize meal
2 pints of water

Method
Finely chop the onion and garlic.

Finely chop the parsley.

Whisk the eggs.

Place the chopped vegetables, meat and seasoning in a large bowl.

Add the egg and mix together to form a meatball mixture.

Roll into balls.

Place into a saucepan with a glug of olive oil, and brown over a medium heat for 15 minutes.

Add the chopped tomatoes and place a lid on top for 20 minutes.

Add the maize and water to a saucepan.

Gently mix together, and once combined, add 50ml of water and stir continuously for 10 minutes over a low heat until the sadsa comes together.

Serve as you would mashed potato, with the meatballs, and an optional side salad.
