African Vegetable Stew

Mild and creamy packed with goodness!

Preparation Time: 15 minutes
Cooking Time: 35 minutes
Makes: 4

Ingredients
2 teaspoons olive oil
1 large brown onion - thinly sliced
2 celery sticks - finely chopped
1 large carrot - finely chopped
2 crushed garlic cloves
1-2 tablespoon curry powder
800g sweet potato - peeled and cut into 2cm pieces
400g can diced tomato
250ml water
3/4 cup coconut milk
1 teaspoon cinnamon
40g unsalted peanuts
1 bunch spinach
2 cups basmati rice to serve (I used Slendier Slim rice - great for weight loss and healthier than other rices or pastas) have a look at for more information http://www.slendierslim.com.au/


Method
Heat the oil in a large pan over medium heat. Add the onion, celery and carrot and stir for 6-8 minutes or until soft
Add the garlic and curry powder and stir for 1-2 minutes then add the sweet potato and stir until combined
Stir in tomato, water and coconut milk and bring to the boil
Simmer, partially covered for 20 minutes or until sweet potato is just tender
Stir in sugar and half the peanuts, cook for 5 minutes to develop the flavours
Stir in spinach and cook for a further 2 minutes then serve with rice and extra peanuts
