After Dinner Mint Mousse

This recipe should be made with After Eight mints. Unfortunately I found that some human mice had eaten the box I'd set aside for this dessert, so I compromised with a selection box of chocolate mints.



Minty Chocolate Mousse


Preparation Time:10 minutes
Chilling Time: 2 hours, minimum
Makes: 6 servings

Ingredients
1 box of chocolate mints or After Eight mints (about 200g)
1 or 2 tbsp brandy or chocolate liqueur. I used Crème de Cacao.
300ml double or whipping cream
1tbsp caster sugar

Method
Put the chocolate mints into a heavy bottomed saucepan with the alcohol. Reserve 6 mints if you wish to use them as a garnish.

Heat gently, stirring occasionally, until melted.

Remove from the heat and allow to cool.

Whip the cream with the caster sugar until they form soft peaks.

Fold one third of the cream into the chocolate mixture to slacken it off a little.

Fold the rest of the melted chocolate into the cream mixture.

Divide between six dessert glasses and chill in the fridge for at least two hours before serving.

Garnish with a reserved chocolate mint, or a fresh mint leaf.
