This spread is my own version of Nutella, well sort of. It's made with almonds instead if hazelnuts and it's something I think you will like just as much as Nutella, except there's no preservatives, and if you use all organic or mostly organic ingredients it's a lot better for you.
Cacao and Almond Spread
Preparation Time: 10 minutes
Makes: 1 small jar
Ingredients 1 cup almonds
1 heaped tablespoon of raw cacao
8 pitted dates
3 tablespoons of sweet almond oil
1 teaspoon of honey
1/4 cup of almond milk
Method I had some trouble with this so I used a blender, a processor and a stick blender, but if you have a good blender like a vita mix you can do it all in the blender.
Place the almonds in a blender and blitz until they are in small pieces.
Almonds blitzed in the blender
Soak dates in hot water for one minute.
Soaking the dates
Chop up dates into smaller pieces so they blend easier.
Add dates, raw cacao, oil and honey to the blender and blitz until almost smooth.
Blitzing the ingredients with the stick blender
If your blender isn't great like mine transfer to a stick blender bowl and blitz until almost smooth.
Add in milk and blitz again.
Spoon mixture into a sterilised glass jar and place in the fridge for up to one week.
Continue to blend longer and add a little extra milk if you want this to be smoother.
This may keep longer than one week in the fridge, but I haven't had mine for more than a week because I love it on everything.
This spread is chunky. It's a bit like crunchy peanut butter.
