Almond Butter Cacao Rounds

These bars or rounds land somewhere in between reese's pieces and bounty bars, which means they are pure bliss. They are vegan, gluten free, and only have natural sugars and oils. But what is more important is they are simply delicious.

These are very simple to make, as they require no cooking or complicated steps. Just simply mix, pour and set! They are so scrumptious, anyone you serve them to will think a lot more work went into them.

Preparation Time: 10 minutes, plus 10-60 minutes setting
Cooking Time: 0 minutes
Makes: 6 bars 12 rounds

Cup almond butter
2/3 Cup dates (pre soaked if dry)
4 Tablespoon raw almonds (or any nut)
2 Tablespoon cacao powder
2 Tablespoon shredded coconut
Dash of water or almond milk to blend

Add the soft dates and almond butter in a strong blender and blend until evenly combined, this may take a few goes.

Once the almond butter and dates are well incorporated, add the cacao and crushed raw almonds. Pulse until a sticky dough-like mix is made.
Add a few tablespoon of water or milk at any stage to help everything blend.

Spoon the mixture onto a small, baking paper-lined tray, or into a silicon muffin tray and press down evenly. (I used a muffin tray to make perfect, bite-sized rounds.)

Sprinkle each round with shredded coconut and refrigerate for at least an hour, or until set. Alternatively place in the freezer for 10 minutes.

Remove from fridge/freezer and cut into rectangular bars, or remove from the mould and enjoy!

NOTE: These are best kept in an airtight container in the fridge or freezer, but don't worry - they can be eaten straight away!
Walnut butter is a great alternative to almond butter!
