Ingredients 2 cups self raising flour
Ĺ cup caster sugar
4 tsp baking powder
1 tsp salt
2 cups milk
60 g melted butter
1 punnet of blueberries
Extra butter for frying if you donít have a non stick frypan
Combine dry ingredients.
Melt butter and allow to cool slightly.
Make a hollow in dry ingredients and add to that the eggs and milk.
Whisk until smooth.
Add butter and stir gently.
Allow to sit for 30 minutes.
Preheat non stick frypan to a medium heat. Ladle in a portion of mix and sprinkle with blueberries.
Cook for a few minutes. Turn when edges start to bubble.
Cook on other side for a further minute or so.
Serve with extra blueberries and a generous amount of maple syrup.
