The title of this salad comes from the raspberries and the blueberries which are both high in antioxidants.
It's a delicious salad that tastes summery, and is good for you too. Best of all for busy people, it is quick and easy to make.
Preparation Time: 10 minutes
Cooking Time: None

The colourful ingredients to help you eat a rainbow and get to your recommended five-a-day
Ingredients
200g raspberries
200g blueberries
3 nectarines, sliced
Seeds from one pomegranate
Squeeze of lime juice

Beautiful blueberries and raspberries, all rinsed and ready to go in the big bowl
Method
Rinse the blueberries and raspberries.
Slice the nectarines and discard the stone. Because nectarines have a smooth skin, rather than a fuzzy peach skin, you can leave the skin on.
Combine the blueberries, raspberries, and nectarine slices in a large bowl.
Sprinkle the pomegranate seeds over the top of the salad.
Squeeze the lime juice over the fruit salad before serving.
Variations: Replace the nectarines with mangoes for a more tropical salad.

That's it - as quick, simple, and easy as that, and quite yummy too.

This salad is very popular with my two daughters, aged 5 and 8. They enjoyed helping, especially with the squeezing of the lime.
