These Antipasto chicken parcels are an exciting Mediterranean variation of the
Mustard chicken parcels in 'My Cookbook'. They're yummy and super quick and easy to make. Perfect for lunch or dinner, or as a 'little bit fancy' appetiser, these chicken parcels are sure to wow even your fussiest eater.

Cooking Time: 20 minutes
Makes: 6 parcels
Ingredients
3 puff pastry sheets
3 chicken thigh fillets, halved
1 packet of Greek antipasto
1 egg, lightly beaten
Mixed salad, to serve
Method
Preheat oven to 180°C fan forced.
Line an oven tray with baking paper.
Halve each sheet of puff pastry.
Pound chicken thighs to tenderise meat.
Place one piece of chicken at the bottom of each sheet of puff pastry.
Top each piece of chicken with antipasto.
Fold pastry over to enclose.
Using fingertips, press edges together to seal. Trim excess if necessary.
Brush parcels with eggwash.
Bake for approximately 20 to 25 minutes or until pastry is puffed and golden.
