Apple and Avocado Rice Paper Rolls

These apple and avocado rice paper rolls make a healthy and delicious lunch or snack.



Preparation Time: 15 minutes
Cooking Time: 3 minutes
Makes: 10 servings

Ingredients
1 handful of parsley, chopped
1 cup of iceberg lettuce, chopped
1 1/2 avocado, thinly sliced
1 large carrot, thinly sliced
1/2 cucumber, thinly sliced
1 apple, thinly sliced

Method
Chop all ingredients.

Soak your rice paper, according to instructions on packaging and then place your filling in the middle of the rice paper roll--do not overstuff--and gently roll tucking in the side.

Repeat with remaining rice paper rolls.
