Apple and Oat Tea Cake

This is such a quick and tasty cake to put together. It's great for lunchboxes, morning or afternoon tea.

Preparation Time: 15 minutes
Cooking Time: 40-45 minutes
Serves: makes 1 cake

Ingredients
2 cups self-raising flour
1/2 cup rolled oats
1/2 cup mixed dried fruit
3/4 cup sugar
1 teaspoon cinnamon
1 medium apple peeled and grated
1 cup milk
2 large eggs
75 grams melted butter

Method
Preheat oven to 160 degrees. Grease and line a loaf tin with non-stick baking paper.
Sift the flour, sugar, and cinnamon into a large bowl. Add the rolled oats, mix together with a wooden spoon.




In a separate bowl or jug, add the butter, sugar and milk, whisk to combine.
Form a well in the centre of the flour mixture. Pour in the wet ingredients and add the dried fruit and grated apple. Fold through until well incorporated.



Pour into pan and bake in the oven for 40-45 minutes until a skewer inserted into the centre comes out clean.
