A hot new trend, the mug cake is everywhere! For the time poor cake lovers out there, this speedy apple mug cake is a savior, a quick fix when making a full sized cake is not an option. This batter makes 2-3 mugs, so it's brilliant for a pair of easy snacks over a coffee. 1-2 minutes in the microwave will give this cake a lovely light texture.
Ingredients 2 tablespoons butter or margarine
1 teaspoon ground cinnamon
1 unpeeled apple
2 tablespoons milk
1 teaspoon vanilla extract
1/2 cup granulated sugar
6 tablespoons self raising flour
A pinch of salt
Grate the apple into a microwave safe bowl.
Add the butter and cinnamon, then microwave this for 1 minute to melt the butter and soften the apple. Remove from the microwave and mix well.
Add the egg and whisk to combine with a fork.
Add the milk, vanilla and sugar, then mix well.
Add the flour and salt and mix to from an apple cake batter.
Spoon the batter evenly between 2 or 3 mugs or microwave safe cups. I used a cup here so that I could see how well the inside of the cake was cooking, but a decorative mug would work well too.
Microwave each cup or mug separately for between 1 1/2 minutes and 2 1/2 minutes. This one turned out best at 1 minute 20 (2 minutes left the cake too dry, while 1 minute didn't quite cook the cake all the way through) but every microwave is different. For your first shot try out a 50 second burst first and add extra 20 second bursts to work out the best timing for your microwave.
Remove the cakes from the microwave and allow to cool slightly. Be careful here, because the mugs or cups may be hot.
While the cakes are cooling, make some frosting to top each with. For these cakes, I used a butter icing coloured with green food dye. Beat 1 cup of butter with 1 cup of icing sugar until it is light and fluffy, then beat in a teaspoon of milk before finally mixing through a few drops of food dye.
Top each cake with icing and devour. These are best when served warm with the icing becoming slightly melted on top.
