Such an easy and tasty recipe that can be served as a dessert with ice cream or can be stored in a container and eaten later as a snack. For variations of this recipe try adding sultanas, berries, cooked rhubarb, dates or nuts to the apple mixture.
Ingredients 1 1/2 cups self raising flour
1/4 tsp salt
1/2 cup brown sugar (firmly packed)
1 1/4 tsp cinnamon
1/2 cup rolled oats
2 Tbsp milk
1/4 cup margarine or butter
3 small apples
2 tsp cornstarch
3 Tbsp maple syrup
1 tsp vanilla extract
Preheat the oven to 180 degrees C.
Grease (with oil or butter) a small baking pan or glass dish and set aside.
For the dough, mix together the flour, salt, brown sugar, cinnamon, rolled oats, milk and butter until well combined. To make this step easier, microwave the butter for 30 seconds to soften before adding the other ingredients.
Spoon 2/3 of the dough mixture into the greased pan. Make sure that you press down the mixture firmly into the base of the pan.
To make the apple filling, peel, core and slice the apples into small pieces.
Slice the apples thinly so that they will cook faster in the oven
In a bowl combine the sliced apples, cornstarch, maple syrup and vanilla extract.
Spoon this mixture on top of the dough mixture in the pan.
Layer the remaining dough over the apple mixture and gently press it down.
