Apple Crumble Cheesecake

Cheesecakes are usually smooth and creamy but if you're looking for a crispy treat, give this Apple Crumble Cheesecake a try. It will definitely bring some crunch into your cheesecake.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 12 servings

Biscuit Base
125g arnotts biscuits
60g unsalted butter, melted

Crumble Topping
cup rolled oats
2 tbsp plain flour
1 tbsp brown sugar
25g unsalted butter, chilled chopped

Cream Cheese Filling
250g cream cheese, softened
1/3 cup caster sugar
1 egg
tsp ground cinnamon
200g can apple, diced

Preheat oven 160C, line a muffin pan with cupcake cases (I made 6 cupcake servings and filled an oven proof dish approx. 20cm x 15cm).

Process biscuits until they resemble fine breadcrumbs. Add in the melted butter and stir to combine.

Press the biscuit mixture over the base of each case.

Place in the refrigerator to set.

Meanwhile beat the cream cheese and sugar together until smooth.

Add the egg and beat until combined.

Fold in the apples and sift in the cinnamon. Stir to combine well.

Pour the cheesecake mixture into the prepared cases.

In a large bowl, place the oats, flour, sugar and combine well. With finger tips, rub in butter.

Sprinkle over the cheesecake mixture.

Bake for 30 minutes or until golden.

Remove from the oven and allow the cheesecakes to set.
