Apple & Custard Teacake

An apple a day keeps the doctor away they say...This Apple and Custard Teacake might not do the same but it will definitely satisfy those hungry tastebuds.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 2 servings

75g butter, softened
1/2 cup caster sugar
1 tsp vanilla essence
1 egg
1 1/4 cup self-raising flour
3/4 cup milk
200g can apples, diced
150ml thick vanilla custard
1/4 cup dessicated coconut

Preheat oven 160C, grease and line a cake tin (I used a 10 centimetre diameter tin)

Beat together butter, sugar and vanilla until pale.

Add in the egg and beat well.

Sift in the flour.

Add the flour and milk alternatively, mix well to combine.

Spread half the batter into the cake tin.

Arrange half the apples over the top.

Dollop half the custard over.

Sprinkle with coconut.

Spoon over with remaining batter, top with apple and custard.

Bake for 30 minutes or until a skewer inserted comes out clean.

Serve warm.

Please stop using 10cm cake tin, plese use 20 cm tin, - sorry but who uses 10cm
The quantity needs to be doubled for a 20cm cake tin.
