Apple Pie Samosas

Apple pie samosas served with cream


These apple pie samosas or parcels are quite fast to put together and using tart (Granny Smith) apples made the combination of apples and cream delectable!

I mostly use coconut sugar in my baking as this is a natural product, unrefined and much healthier than real sugar.

These parcels are, in comparison to a lot of desserts, a fairly low calorie treat and perfect if you need something to stop the sweet cravings.

It is also a good way to get apples into your diet.

Preparation Time: 25 minutes
Cooking Time: 25 minutes
Makes: 6-8 samosas

Ingredients
3 cooking apples
50 g sugar (I used coconut sugar)
1 tsp mixed ground spice
60 g sultanas
4 sheets Filo pastry
30 g melted butter or low fat spread

Method

Heat the oven to 200C.

Peel, core and chop the apples. In a small saucepan, mix the apples, sugar, mixed spice and sultanas with 1 tblsp of water.

Cook for about 5-6 minutes, or until the apples have softened. Stir a few times whilst cooking.

Allow to cool slightly.

Microwave the butter, and cut the Filo sheets into three lengthways, and brush lightly between each layer, with the melted butter.

Place a spoonful of the apple filling at the top of each strip.

Roll the first bit slightly and then fold over and over to form triangular parcels.

Place on a baking tray that has baking paper on it.

Bake for 15-20 minutes until crisp and golden.

They should now look like this when baked!


If you want a slightly lower calorie dessert, you could serve with a plain low-fat yoghurt.
