Apple & Sesame Energy Balls

One of my favorite snacks is an apple with walnut butter, tahini or peanut butter. The flavours are just made for each other. These Apple & Sesame Energy Balls were inspired by this snack combo.

Preparation Time: 10 minutes plus 30 minutes for setting
Cooking Time: 0 minutes
Makes: 25 servings

2 cups rolled oats (one cup blitzed into oat flour)
1 apple
1 cup tahini
2 tbs sesame seeds
2 tbsp agave
2 tsp cinnamon

Blend 1 cup of oats so its forms a flour.

Combine the oat flour with the grated apple, whole oats, tahini and cinnamon in a food processor.

Pulse until a dough forms - if the mixture looks a little wet add in some more oats. Taste - if it's not sweet enough for you add more agave. If your blender makes the mixture hot (like mine) put the mix into the fridge to set for 30 minutes.

Pour the sesame seeds into a small bowl or saucer. Roll tablespoon sized chunks of the mix into balls and coat in the sesame seeds.

Place onto a lined plate or Tupperware and set in the fridge for 30 minutes.

Enjoy on their own, with yogurt or on top of a banana berry icecream bowl or Matcha icecream bowl.

Store in the fridge for up to a week!
Any nut butter or seed butter can be used in place of tahini.
