Ingredients 1 large sheet of premade puff pastry
4 red apples, peeled and cut into chunks
1 teaspoon ground cinnamon
¼ cup raisins
Zest and juice of 1 lemon
¾ cup (165g) brown sugar
125g fresh sourdough breadcrumbs
Double cream, to serve
Combine apple, cinnamon, raisins, lemon juice and zest and half of the brown sugar in a bowl and mix so that the apple pieces are coated. Add half of the breadcrumbs and mix again.
Sprinkle the remaining sugar and crumbs over the pastry sheet and put the apple mixture down the centre,
Roll up the pastry to form a large log, sealing at all ends by folding the pastry up.
Bake for 30 minutes or until golden and serve with double cream.
