These tasty cigars are filled with apple and sultanas with a cinnamon syrup and are a healthy snack or dessert. I use rice paper instead of pastry which makes them a light and gluten free treat. Dust with icing sugar and serve warm.
Ingredients 1 Granny Smith apple, peeled, cored and sliced
1/4 cup sultanas
1 tsp cinnamon
1 tbsp sugar
8 sheets rice paper
1 tbsp oil
Icing sugar, to dust
Preheat the oven to 200 degrees. Line a baking tray with baking paper.
Put the apple, sultanas, sugar and cinnamon into a bowl. Stir to combine. Set aside for 15 minutes. The sugar and cinnamon will form a syrup.

Put some warm water on a plate and place a sheet of rice paper in the water so it is fully covered. Leave for 1 minute or until the rice paper is soft.
Stir the apple and sultanas so it is fully covered with the cinnamon syrup.
Gently place the rice paper on a flat surface and put a few slices of apple and some sultanas in a line on the middle of the rice paper.
Fold the bottom and top of the rice paper over the ingredients, then roll until sealed, taking care not to rip the rice paper. Repeat with the other rice paper and ingredients. Set aside for 5 minutes for the rice paper to dry out.
Fold the bottom of the rice paper over the apple and sultana mixture and the the top before rolling
Use a pastry brush and lightly oil the rice paper.

Bake for 15-20 minutes, gently turning the cigar over at 10 minutes, until the rice paper is hard and slightly golden brown.
