Apricot and Almond Slice

This Apricot and Almond Slice is simple, sweet and refreshing. It also makes for a perfect afternoon-tea dessert.



Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 6 servings

Ingredients
125g unsalted butter, softened
1/3 cup caster sugar
2 eggs
1 cup almond meal
2 tbsp plain flour
400g canned apricot halves, drained
1 tbsp apricot jam


Method

Preheat oven to 180C, grease and line a slab tin (I used an 8 inch round cake pan).

Beat the butter and sugar together until pale and creamy.



Add in the eggs and beat well after each addition.



Stir in the almond meal and flour.





Spread the mixture into the tin.



Place apricots cut side up and slightly press in slightly.



Bake for 20 minutes or until golden.

Microwave the jam for 15-30 seconds.

Brush over the slice and allow it to cool.



Serve warm with custard or ice-cream if preferred.
