Apricot & Honey Sponge

When you make a cake with lots of honey, it creates a dense, spongey texture that releases energy slowly, leaving you feeling fuller for longer. Honey cakes don't need any additional sugar, so make a delicious sin free treat.

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 10 servings

Ingredients
200g wholemeal flour
80g margarine
1 egg
1 x 240g tinned apricots in fruit juice
tbsp baking powder
4 tbsp honey

Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.

Drain the apricots, but save some of the juice.

Blend the apricots, margarine, honey, egg, and one tablespoon of the drained fruit juice in a food processor.

Fold in the flour and baking powder, then pour into a loaf tin

Bake in the oven.

Was following this step by step. Drained the apricots over the sink. What can I use to replace the liquid that went down the drain.
Hi

It did say to save some of the juice, but don't worry. Just use a bit of fruit juice instead; it won't make any difference.
