Create a fabulous meal from scratch using these tasty ingredients.
Preheat your oven to 220 degrees Celsius.
On the right side up, make 2 cuts into the fleshiest part of the fish. Coat your roasting pan with some of the oil. Then brush the fish with a little oil on both sides and lay it down on the pan. Sprinkle both sides of the fish with the sesame seeds and season with a little salt and pepper. Bake the fish for about 25 minutes or until cooked through and the flesh flakes when tested with a fork.
In the meantime, place the soy sauce, vinegar, 2 tablespoons of water, ginger, chilli and half the spring onions into a saucepan. Cook gently, on a low heat until the ginger and chilli are just cooked through and slightly tender.
Steam the carrot for a few minutes before adding the pak choy pieces to the steamer. Cook the vegetables until just tender. There should still be a slight crunch to the vegetables when done.
Heat the remaining oil in a frying pan on a medium heat. Transfer the pak choy to the pan and sautť for about 2 minutes on both sides, or until the greens are slightly coloured.
Lay the cooked fish and vegetables on a bed of rice. Drizzle the sauce over the fish and sprinkle with the remaining spring onions. Serve immediately.
