This refreshing Asian Glass Noodle Salad is perfect for entertaining! Great for BBQs and lunch or dinner parties!
Preparation Time: 15 minutes
Cooking Time: 2 minutes (no real cooking involved)
Makes: 6 servings
Ingredients 1 Packet of Rice Vermicelli noodles
1 Lebanese cucumber
Coriander (a handful)
Vietnamese/Thai Salad dressing (can be purchased from the supermarket in the Asian section)
Soak the rice noodles in some hot water. Once soft, drain and set aside
This is the brand I like to use.
Wash, peel and julienne the carrot
Wash and cut the cucumber into strips
Wash and chop the coriander
Combine/Toss all ingredients (glass noodles, carrot, cucumber, coriander) in a large bowl
In a small bowl, combine a bit of fish sauce and the Thai/Vietnamese salad dressing (taste and adjust).
Dress the salad with the dressing and toss.
Place salad in serving bowl
Squeeze some lime juice if you wish (optional)
Options: You can add some BBQ prawns or other meats on top of the salad if you wish. Even some cold prawns tossed through would be nice!
