While making a salad one day, I decided to create my own dressing as we had run out of the store bought stuff and I was craving balsamic. I simply combined all the flavours I liked and shook them up together. This dressing is all about balancing flavours. I am constantly tweaking this recipe every time I make it. I have never really quantified this recipe either, I've always pulled a Jamie Oliver and gone by the taste. Though, I love it so much and everyone asks me to make it for their salads, so I decided to share the love!
2 tbsp balsamic vinegar
3 tbsp olive oil
1-2 tbsp basil paste, heaped
1/2 large lemon, juiced
salt & pepper to taste
1/3 tsp water (optional)
Place balsamic vinegar, olive oil, basil paste, lemon juice and salt & pepper in a tumbler with a lid.
Shake well to combine. Taste after shaking to make sure all flavours are balanced. If you like a basil taste, add more basil. If you like a lemon flavour, add more lemon. A good dressing is all about balancing the strong flavours.
If you like a dressing that is thin (watery) add the water and shake well. If not, leave as is without the water.
