Aussie Lamington Muffins

Aussie! Aussie! Aussie! Oi! Oi! Oi! Celebrate this Australia Day with my indulgent chocolate lamington muffins. What a treat!

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Makes: 12 muffins

125g butter
cup sugar
2 eggs
1 cup self-raising flour
4 Tbsp cocoa powder
1/3 cup desiccated coconut
3/4 cup milk

For glaze:
cup pure icing sugar
1 tsp cocoa powder
1 Tbsp boiling water
2 Tbsp milk
20g butter, melted

Extra coconut for coating


For muffins:

Preheat oven to 180C and grease a 12-cup muffin pan.

In a large bowl, place butter and sugar and beat until light and fluffy.

Add eggs one at a time and beat until smooth.

Sift flour and cocoa powder into the wet ingredients. Add coconut and roughly combine with a spoon.

Gradually add milk and beat until just combined.

Spoon mixture into tin and bake for 25 minutes or until muffins are cooked when tested with a skewer. Leave to cool on wire racks.

For glaze:

Place all ingredients in a small bowl and stir until combined and smooth.

Dip the top of cooled muffins into the glaze and then quickly into coconut. Set aside on a wire rack to set.
