Avocado Broccoli Chicken Salad

Healthy, fresh, and nutritious chicken, broccoli, and avocado salad. This is so refreshing during summer, but in the winter it reminds me of sunnier times.

Delicious salad

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 1 servings

2 chicken thighs
1 romaine lettuce
2 purple broccoli spears
1 tblsp parmesan cheese
Half a lemon
Half an avocado
Black pepper

Required ingredients

Poach the chicken thighs - place them in a saucepan of boiling water (enough to cover them), and turn to a simmer. Cover for 20 minutes.

Poaching chicken thighs

After 10 minutes boil some water in a seperate saucepan and add the broccoli spears. Turn to a simmer and cover for 10 minutes.

Prep the salad - Rip the romaine lettuce leaves and wash.

Put the leaves in a bowl and dress with lemon, parmesan and black pepper.

Add the avocado - squeeze it out of its skin and toss in the salad.

Put the salad to one side and remove the chicken from the saucepan. Remove the meat from the bones.

Place the pulled meat on top of the salad and season with black pepper.
