Ingredients 1 large avocado
2 very small eggs
Salt & pepper
3 - 4 pieces short cut bacon (optional)
Cut up the bacon into small bits. I kept one bit large for decoration.
Cook in a frypan until it is starting to brown.
Preheat the oven to 190°.
Meanwhile, wash the outside of the avocado, cut it in half and take out the pip.
Scoop out some of the flesh so that the egg will fit in.
Put some baking paper on a small baking tray or ramekin, place the avocado halves on this and crack the eggs carefully into them. Do not worry if it spills out as this egg white can also be eaten (hence I washed the avocado first).
Add some of the bacon on the top.
Bake for about 10 -15 minutes or until the egg is done.
Serve, topped with the extra bacon and chives (which I cut up and forgot in this case!)
