Ingredients 2 Ripe Avocados
2 Green Apples
2 Tablespoons Pomegranate Seeds
2 Tablespoons Pepitas
2 Tablespoons Sultanas
Salt and Pepper to taste
Lemon Juice and Extra Virgin Olive Oil to season
Radishes not only add nutrients to this salad, it also adds colour and texture.
Cut the avocados in half and remove the seeds, then score the flesh into a criss-cross pattern. Scoop the avocado onto a large serving plate.
Using a mandolin or vegetable peeler thinly slice the radishes and green apples then add to the avocado.
Colour and freshness is the cornerstone to this wonderful salad.
Toast the pepitas until they start to turn golden in colour then add to the salad.
Add the pomegranate seeds and sultanas to the salad.
Season the salad with a little salt and pepper, lemon juice and extra virgin olive oil and toss to combine.
Cover and refrigerate until required.
