This salad is super quick to whip up and is scrumptious (as is anything with avocado!) The walnuts add a crunchy element that pairs nicely with the creaminess of the avocado. The salad makes a great side dish for a meat dish or, as pictured, smoked salmon.
This recipe is written with the intention of serving the salad on a platter, but you can also throw all the ingredients in a bowl, toss, and serve straightaway.
Preparation Time: 5 minutes
Ingredients 250g baby spinach
Small handful walnuts
1 tbsp olive oil
1/2 tbsp apple cider vinegar
Prepare the ingredients: cut the avocado into small slices, chop the tomatoes into large pieces and crush the walnuts.
Layer the baby spinach leaves on a serving platter. Top with the tomato and avocado. Sprinkle over the walnut.
Lightly drizzle the olive oil and apple cider vinegar over the salad. Serve immediately.
