This is a delicious, easy to make tropical salad – perfect for warm weather.
Preparation Time: 20 minutes
Cooking Time: 5–10 minutes (to fry bacon)
Makes: 4 or more servings
Ingredients 3 rashers of bacon
1 can of pineapple pieces in juice
1 bag of cos lettuce
1 punnet of cherry tomatoes (halved, if you prefer)
1/2 cup of macadamia nuts (toasted, if you prefer)
1/4 cup of coconut flakes
A dash of olive oil
Salt and pepper to taste
Trim and fry the bacon. Drain, dice, then set aside.
Toast macadamia nuts if you like them toasted.
Chop tomatoes (if you like them chopped).
Rinse and drain lettuce leaves.
Toss lettuce leaves, pineapple pieces, cherry tomatoes and macadamia nuts together in a large bowl.
Combine a dash of olive oil with pineapple juice to make a dressing. Add salt and pepper to taste.
Drizzle dressing over the top of the salad and garnish with coconut flakes.
This salad is delicious, simple and refreshing. I used ingredients I love and had on hand, but you could easily leave out the bacon or substitute peach for pineapple, or capsicum for tomato etc.
