Bagel Brunch - French Toast Casserole

I ate this for breakfast however you could serve it as a dessert.

Preparation Time: 5 minutes plus overnight
Cooking Time: 50 minutes
Serves: 2

1 bagel
45 g or 3 wedges Laughing Cow cheese
2 small eggs
cup milk
tsp vanilla
1 tbsp maple syrup
1/8 cup chopped pecans
Cinnamon sugar

Cut the bagels in half and spread the Laughing Cow cheese evenly over the two halves.

Cut each half into eights.


Place them in a small oven proof dish, that has been generously sprayed with cooking spray.

Mix together the eggs, milk, vanilla and maple syrup and pour over the bagels, and then sprinkle with the chopped pecans.


Cover the dish with foil, put in the fridge overnight.

The next morning, take the dish out about 30 minutes prior to baking.

Preheat the oven to 180/160 fan forced.

Bake the covered food in the oven for about 25 minutes.

Uncover, sprinkle liberally with some cinnamon sugar, and bake a further 15 minutes or so, or until the centre is firm and the surface is lightly brown.


cut and serve with some warmed maple syrup.
