Baingan Ka Bharta (Egg Plant Mash)

One of the classic and delicious North Indian recipes.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 4 servings

1 large baingan ( brinjal / egg plant)
2 tbs oil
5 chopped onions
3 chopped tomatoes
3-4 garlic cloves
1 tbsp red chilli powder
1 tbsp coriander powder
Chopped fresh coriander leaves


Roast the brinjal on a medium flame or heat it in the microwave for 10min, until it is cooked well and the skin is charred completely.

Take 2 tbsp of oil in the frying pan and heat it.

Fry the onions until they turn a golden brown colour.
Add the chopped tomatoes and garlic and then mix through the onions.

Add 1 tbsp red chilli powder and coriander powder and stir it until the masala has cooked completely and oil rises to the surface.

Add the mashed brinjal, mix it well and cook it for 5 min on a low flame.

Garnish it with finely chopped coriander leaves and serve hot with Chapatti or Butter Nan.
