Ingredients 1 tbsp olive oil
800g can mixed beans
1 garlic clove, crushed
1 large or 2 small brown onions, finely diced
400g can crushed tomatoes
4 fresh tomatoes, chopped (or another can of tomatoes)
2 tsp balsamic vinegar
1 tsp Dijon mustard
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper
Heat the oil in a saucepan over low-medium heat.
Add the garlic and onion and cook for 5 minutes or until onion is soft.
Add tomatoes, mustard, vinegar and herbs. Simmer, stirring, for a few minutes.
Drain the beans and add them to the pan. Bring to the boil, then simmer for another 10-30 minutes (depending on how thick you'd like it).
