Baked Eggs On Cheesy Toast

Are you looking for a new and interesting way to eat eggs for breakfast? These baked eggs on cheesy toast are a hit in my family, the cheese is an indulgent extra and the soft eggs are great for dipping so kids love them too.


Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 2

Ingredients
2 eggs
2 slices of bread
1/4 cup grated cheese
1 tsp margarine
salt, to taste

Method
Preheat oven to 180C.
Place the bread on a baking tray lined with baking paper. Using a spoon, push the bread firmly to compress a large rectangle into the centre of the bread. Season.

Spread the margarine around the edges of the rectangle and on the crust.
Crack the egg directly into the centre of the compressed bread. Season again.
Sprinkle cheese around the edges of the bread.
Bake for 8-10 minutes for soft runny eggs.
