Baked Kumara Cubes w Spicy Tomato Sauce

This dish is more about the sauce than anything else. It is simple but marvelous. It can be used on pasta, rice, in beans, on meats anything really! You can adjust the amount of chilli to your taste, but I love it quite spicy.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 2-3 servings

Ingredients
Sauce

1 teaspoon olive oil
1 large red chilli
5 cm fresh root ginger
3 cloves garlic
400 grams tomatoes
2 tablespoons soy sauce
1 tablespoon sugar (optional)

Base
1 kg Kumara

Method
Peel and dice a large kumara and put in a 170C oven to bake, I don't use oil but if you wish you can. Flip after 15 minutes and start your sauce.



Slice the garlic and chilli into rings and finely dice the ginger. Add to an oiled pan over a medium heat and stir 1-2 minutes, until fragrant.



Dice your fresh tomatoes (I used cherry) and add to the pan.

Pour in the soy sauce and sugar (if using**) and cook for 5-7 minutes. This is a fresh, light sauce were all the ingredients are still identifiable, not a mushy mess, so don't leave it to simmer.

Your kumara cubes should now be ready.



Toss them into a bowl and ladle the sauce over the top, sprinkle with some fresh parsley and enjoy.



**As I was using a sweet potato as my base I omitted the sugar. If using this sauce for pasta, pizza or over rice, add the sugar.
