Baked Plum Porridge

This has become one of my favourite winter breakfasts - it is so healthy and filling, but tastes like dessert!



Oats are a great source of fibre - something our diets tend to lack these days - so I add a teaspoon of LSA to my porridge to further boost the nutritional value. Nuts and seeds are great for keeping us fuller for longer, and add important essential fats and oils into our diets.

Preparation Time: 3 minutes
Cooking Time: 2 minutes
Makes: 1 servings

Ingredients



1/2 cup oats
3/4 cup water
1/2 plum, chopped
1 heaped tsp LSA
1 tsp chopped nuts
pinch of cinnamon
1/2 cup milk (I use soy)

Method
Place the oats and plum in a bowl, and cover with the water. (Optional: add a sprinkle of brown sugar to get a sweet 'crumble' like flavour).



Microwave on high power for 2 minutes.
Sprinkle LSA, nuts and cinnamon over the top and stir through well.



Add milk and mix well. You can also add a teaspoon of honey if you prefer a sweeter taste.
