Zucchini slice is healthy and tasty; most importantly, it is super easy to make. At the same the time, you can add in loads of veggies for a super nutritious meal. Leave out the Proscuitto for a vegetarian dish.
Ingredients 300g white zucchini
100g sweet potato
1/2 small spanish onion
50g red capsicum
1/2 truss tomato
3 slices of proscuitto
5ml olive oil
50g mixed cheese
Salt & pepper to season
10g fresh chive to garnish
Pre heat the oven to 180C.
Lightly grease the glass baking tray.
Combine zucchini, diced onion, flour and cheese in a large bowl.
Mix in a handful of sweet potato.
Add olive oil and eggs, mix well to combine.
Season with pink sea salt & pepper.
Pour the mixture into the glass tray.
Bake for 20-25 minutes until golden and set.
Remove and allow to cool.
Place the Proscuitto slices into the oven and bake for 3 minutes until crisp.
Serve the zucchini slice on plate.
Season with pink sea salt and pepper
Garnish with crispy Proscuitto slices and chive.
