Balsamic Glazed Salmon

A quick and easy glaze featuring balsamic vinegar, garlic, white wine, honey, and Dijon mustard. This fantastic combination makes salmon fillets come to life. Pair with some roast vegetables or a fresh salad for a delicious dinner or lunch that is easy but utterly delicious



Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
2 salmon fillets
2 garlic cloves - minced
1 tablespoon white wine
1/2 tablespoon honey
1/4 cup balsamic vinegar
1 teaspoons Dijon mustard
Salt and pepper to taste
1 tablespoon chopped fresh rosemary
Oil to cook



Method
Preheat oven to 200 degrees C. Line a baking sheet with foil and spray with non-stick cooking spray.

Over a medium heat stir the minced garlic in a lightly oiled pan until it starts to soften.



Add the white wine, honey, balsamic vinegar, mustard, rosemary, salt and pepper. Simmer, uncovered, for about 3 minutes, or until the glaze has started to thicken.

Put salmon fillets on the foil-lined baking tray and brush with half the balsamic glaze.



Bake in the preheated oven for 10 -14 minutes. The salmon is ready when the flesh flakes easily with a fork, check on it after 8 minutes, there is nothing worse than dry salmon!

Brush the fillets with the remaining warm glaze and serve with sweet potato fries and a light salad.
