These banana, apple and oat cookies are soft, moist, and taste like sweet apple pie. They almost have a muffin like consistency, enjoy one with a cup of tea or grab 3 or 4 for a great breakfast on the run.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients 1 very ripe banana
1 tsp vanilla essence or vanilla bean
2 tbsp coconut oil
¾ cup wholemeal SR flour
1 tsp cinnamon
1 cup rolled oats
2 tbsp honey
Preheat oven to 190C. Line a baking tray with baking paper.
In a bowl place the oats, wholemeal flour and cinnamon then mix.
Crack the egg into another bowl and whisk lightly, add the oil, honey and vanilla then add the wet ingredients to the dry and mix.
Fold in the mashed banana and peeled, cored and diced apple.
Using your hands form little cookie sized rounds, flatten a little with a fork and place on the lined baking tray.
Bake for 20 minutes or until the cookies start to bronze. Cool on a wire tray and enjoy for up to 5 days.
