Ingredients 1¾ cups (265g) of self-raising flour
¼ cup (40g) of plain flour
1 cup of brown sugar
2 teaspoons of cinnamon
1 teaspoon of mixed spice
1 banana, mashed
½ cup (125ml) of milk
2 eggs, lightly whisked
50g of butter, melted
1 teaspoon of vanilla essence
250g of mixed berries (frozen or fresh)
Approximately 1 tablespoon of extra butter, melted (to grease the pan)
Preheat the oven to 180 degrees Celsius.
Sift both types of flour into a large bowl, and then lightly stir in the sugar and the spices.
Put the remainder of the ingredients (except for the berries and extra butter) into a jug.
Thoroughly stir the jug's mixture until all of the ingredients combine to form a runny paste.
Make a well in the centre of the dry ingredients; add the banana mixture and berries.
Stir until all of the flour has been combined with the wet ingredients and the berries are spread evenly throughout the mix.
With the extra melted butter grease a 20 X 10cm bread pan.
Pour the finished mixture into the greased pan and then flatten the top with a flat object to smooth the surface (I like to use a fork or the back of a knife).
Bake for 50-55mins or until a skewer comes out clean when inserted into the middle of the bread.
Before removing from the pan, leave the bread to cool for at least 5mins.
This recipe is definitely best eaten warm with a thin layer of butter over each slice. Enjoy!
