Here is an easy way to consume marvelously healthy blueberries, packed full of immune boosting anti - oxidants. Muffins make the perfect school morning tea, or work lunchtime snack. You can use fresh or frozen blueberries, depending on the season. I just made a batch and they've all disappeared in a flash.

Banana and Blueberry Muffins for tea
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes: 12 servings

Ingredients ready to mix
Ingredients
1 cup blueberries (frozen or fresh)
1 ripe banana
2 eggs
1/2 teaspoon vanilla extract
1 orange (juice and finely grated rind)
1/2 cup milk
50 grams butter (melted)
2 cups self raising flour
1/2 cup caster sugar
2 teaspoons baking powder

Fresh orange juice
Method
Melt the butter and stir in the caster sugar until dissolved. Add milk, beat in the eggs one at a time, add vanilla extract, orange juice and finely grated rind.
Sift the self raising flour and baking powder, before adding to the "wet" ingredients.
Mash the banana and add to the mixture. Stir well, adding the blueberries at the end.
Spoon into well greased muffin pans.
Bake in moderate oven for 15 minutes or until they spring back when pressed in the middle.

Into the oven
Serve warm or cold. Enjoy these tasty treats with your favorite cup of tea or coffee.
