Banana Bread is an amazing baked good that can be eaten for morning or afternoon tea or even for dessert. This Banana Bread is so full of flavour and is extremely soft and moist and paired with a cream cheese frosting, it's simply delicious. I would highly recommend this recipe for those who love a delicious and mouthwatering banana bread.
Ingredients Banana Bread
2 cups of plain flour
1 teaspoon of baking powder
1/2 cup of unsalted butter, at room temperature
3/4 cup of brown sugar
1/4 teaspoon of salt
1/2 teaspoon of ground cinnamon
1/2 cup of chopped walnuts
2 large eggs, at room temperature
1/3 cup of vanilla yoghurt
1 teaspoon of vanilla essence
4 large ripe bananas, mashed
Cream Cheese Frosting
125g of cream cheese, softened to room temperature
1/4 cup of unsalted butter, at room temperature
1 cup of icing sugar
1 tablespoon of milk
1/8 teaspoon of salt
Chopped walnuts to sprinkle on top
Preheat the oven to approximately 180 degrees C, making sure that the racks are placed just below the centre of the oven and lightly spray or butter a banana loaf tin and set aside.
Sift the flour, baking powder, salt and cinnamon together until combined and set aside.
In a large bowl, cream together the butter and the sugar with an electric mixer on a medium speed.
Add in the eggs, one at a time, and beat thoroughly after each addition.
Beat in the vanilla, mashed bananas and yoghurt until combined.
Using a large spoon, gently fold the dry ingredients into the wet ingredients until it has just combined, don't over mix, and fold in the walnuts.
Pour the mix into the prepared tin and bake for approximately 30 minutes.
Then loosely cover the bread with aluminium foil to prevent the sides from getting too brown.
Place back in the oven and bake for another 30 minutes, or until a tooth pick inserted into the cake comes out clean. Remove from the oven and allow the cake to cool completely before frosting.
Cream Cheese Frosting
Beat the cream cheese and butter on a medium speed until it is creamy and thoroughly combined.
Add in the icing sugar and beat until it is thick.
Add in the milk and beat for approximately 2 minutes. Add more icing sugar until the desired thickness has been achieved and add the salt to contrast against the frosting becoming too sweet.
Spread the frosting over the cooled banana bread and sprinkle with additional walnuts.
