Banana Cinnamon Muffins

Be prepared to be swooned by this muffin. Light and airy muffin with a tinge of cinnamon, topped with cinnamon sugar crumbs.

Preparation Time: 40 minutes
Cooking Time: 20 minutes
Makes: 9 servings

1 1/2 cups plain flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2-3 dashes of cinnamon powder

3 mashed bananas
1/2 cup caster sugar
1 egg
1/3 cup melted unsalted butter

1/3 cup brown sugar
2 tbs plain flour
1 tsp cinnamon powder
1 tbs unsalted butter

Preheat oven to 190C and line 9 cupcake/muffin tin with dollies.

Sieve plain flour, baking powder, baking soda, salt into a large bowl and mix well.

In a bowl, mash ripened bananas with a fork. Use very ripe bananas (almost black and very soft) to ensure sweetness.

In a medium bowl, beat, with an electric mixer, caster sugar, melted butter, egg, and mashed bananas together until smooth.

Stir wet mixture into large bowl with dry ingredients.
Sprinkle 2-3 dashes of cinnamon powder and mix well.

Distribute muffin mixture evenly into the 9 dollies.
In a bowl, mix brown sugar, flour and cinnamon powder together.

Using your fingers, work in butter by pressing the sugar mixture into the butter until it resembles crumbs.

Sprinkle sugar crumb mixture over muffin mixture.
Bake for 20 minutes.
